Winter Squash Risotto

Winter Squash Risotto

In an attempt to eat healthier this year, I made a deliciously creamy risotto from my friend Anna Dvorak’s e-Book “Nourish:Winter”.  This risotto is so easy and calls for brown rice – for a bit of a bump in the good for you category!

Usually making risotto is time consuming as you need to stir the broth gradually into the rice a little at a time, not so with this recipe.  It’s a simple “cover and cook recipe” with great results!

Here is a link to the recipe: Anna Dvorak’s Winter Squash Risotto

Anna’s cookbook is available through Amazon at:  nourish:winter

Here is what Amazon says, “nourish:winter is a four-part seasonal cookbook, released in sequence and timed with the seasons is the most intuitive way for Anna Dvorak to present her vibrantly healthy recipes, designed to be prepared with the foods that are the freshest and most readily available. She teaches that ingredients taste better when they are cooked and eaten near the time when they are harvested, and a guide that helps to deliver that experience is the best way of understanding the connection from seasonal eating to the plate.”
