In an attempt to eat healthier this year, I made a deliciously creamy risotto from my friend Anna Dvorak’s e-Book “Nourish:Winter”. This risotto is so easy and calls for brown rice – for a bit of a bump in the good for you category!
Usually making risotto is time consuming as you need to stir the broth gradually into the rice a little at a time, not so with this recipe. It’s a simple “cover and cook recipe” with great results!
