Gluten Free Pork Schnitzel

6 pork loin cutlets (1/2” thick)

¼ c. Domata Seasoned Flour

1 egg, beaten

2T. milk

¼ c. gluten free bread crumbs

3 T. shortening

¾ c. chicken broth

1 T. Domata Recipe Ready Flour

¼ tsp. dried dill weed

½ c. sour cream



Pound pork with a mallet to ¼ to 1/8 inch thick.  Cut slits around edges to prevent curling.  Coat meat with Domata Seasoned Flour.  Combine egg and milk.  Dip cutlets in egg mixture, then in bread crumbs.  Melt shortening in a large pan over medium heat.  In hot shortening, cook cutlets 2 to 3 minutes on each side.  Keep warm.  Pour broth in skillet.  Blend Domata Recipe Ready Flour and dill week in sour cream.  Stir sour cream mixture into broth.  Cook and stir until thick.  Do not boil.  Pass sauce with cutlets.  Serves 6.
